Purple Açai Pancakes

Yes you read that right, PURPLE PANCAKES.

Makes a good stack.

Ingredients

  • 1 cup of flour

  • 1 tsp of baking powder

  • 1 tbsp of organic açaí powder

  • 1 tbsp of melted coconut oil

  • 3/4 - 1 cup of oat milk (depending on the flour you use)

Method

  1. Combine dry ingredients and add oil, then add milk until a smooth batter is formed.

  2. Heat a non-stick frying pan over a medium heat. Pour your batter onto the pan, flip the pancake when the “bubbles” start to appear.

  3. Repeat until all the batter is used up.

  4. Serve with fresh fruit and nut butter!
