Christmas Pudding Energy Bites

Christmas Energy Balls

We adapted these festive bliss balls from The Happy Skin Kitchen’s Protein Christmas Energy Balls recipe, and they are fab! We added our organic açai powder for that extra nutritious boost, and decorated with chopped goji berries and puffed millet.

Ingredients

For the energy balls:

  • 1/2 cup walnuts

  • 1/3 cup almonds

  • 10 pitted medjool dates

  • 2 tbsp dried cranberries

  • 1/4 cup raisins

  • 1 tbsp chia seeds

  • 1 tbsp organic açaí powder

  • 1 tbsp coconut oil

  • 1 tsp cinnamon powder

  • 1/2 tsp ground ginger

  • 1/4 tsp ground clove

  • 1/4 tsp ground nutmeg

    For the cashew frosting:

  • 1/2 cup raw cashews soaked in boiling water for 30 mins

  • 1/2 cup tinned coconut milk – make sure your refrigerate the can overnight in the fridge and use only the thick part which should be on top

  • 2 tbsp maple syrup

  • Dash of vanilla extract

Method

  1. Place the almonds and the walnuts into a food processor and blitz until you have a coarse flour.

  2. Add in all the other ingredients and blitz again for at least 1 minute until you have a sticky dough when pressed between your fingers.

  3. Roll the mixture into balls and place them in the fridge to set while you are making the frosting.

  4. To make the frosting place all the ingredients into a blender and blend until you have a smooth and creamy consistency.

  5. Decorate with about 1 tsp of frosting. Top them with chopped gojis and puffed millet. Enjoy!
