Jungle Porridge

In the Brazilian state of Para, açai porridge (or Mingau) is a breakfast staple for most. It’s warming, wholesome and will keep you satisfied until lunch. Now you can enjoy açai on even the coldest mornings.

Serves one

Ingredients

  • 100 g açai purée (one pack)

  • 50 g oats

  • 1 tbsp chia seeds (optional)

  • 300 ml of nut milk

  • pinch of salt

  • Your favourite toppings - we love brazil nuts, coconut flakes, nut butter and cacao nibs, to keep the jungle vibes going

Method

  1. Put the oats, chia seeds, salt and nut milk in a pan on a medium heat.

  2. Bring to the boil and simmer for 2-3 minutes, stirring to make sure it doesn’t stick to the bottom of the pan.

  3. Meanwhile, run the unopened 100 g pack of açai under the tap until thawed, cut it open and stir the açai into the porridge.

  4. Keep stirring until heated through.

  5. Serve in a bowl with your favourite toppings.
