Brazilian Style Pancakes
These simple pancakes only need two ingredients: tapioca flour and water. They are one of the main Brazilian staples, the other being acai. They are gluten-free and dairy-free, making them a great pancake alternative.
Makes about 6 pancakes.
Ingredients
500 g tapioca starch (might also be called cassava flour/cassava starch/manioc flour etc)
250 ml water
Pancake toppings: blueberries, nut butter, honey, strawberries, chocolate – go for it
Method
Measure 250 g of tapioca flour into a large mixing bowl.
2. Slowly add the water, and using your hands rub the tapioca flour and water between your fingers.
3. Keep adding water until the tapioca resembles a crumbly consistency (see photos). If you add too much, the mix will go hard, but don’t worry if this happens – simply add a little tapioca flour.
4. Heat a small frying pan on the hob.
5. Once hot, start to sprinkle the tapioca in the bottom of the pan to make a layer about ½ cm thick.
6. Press the tapioca down with a spatula; The tapioca will start to glue together to form a pancake.
7. Cook for 1 minute on one side then flip the tapioca pancake to cook for a further minute on the other side.
8. Slide onto a plate and adorn with your favourite toppings.
