Cashew & Coconut Blend
Serves one.
Ingredients
200 g açai purée (2 packs)
100 ml coconut water
1 handful of cashew nuts
Squeeze of honey/agave syrup
To garnish: Colourful fruit, granola, nut butter, do your thing…
Method
Run the açai packets under a tap (or soak them in a bowl of warm water) until slightly soft and you can break them up with your hands
Blend everything non-açai really well first. This gets a good creamy cashew emulsion ready.
Add the soft pre-melted & pre-broken açai chunks to the creamy base and blend again until smooth. Add more coconut water if needed.
Pour into your favourite bowl, and top it in style. Bom Dia!
