Açaí Mousse
The creamiest and the most filling snack out there - açaí mousse! Whip it up the day before to enjoy it as a nutritious breakfast.
Ingredients:
- 1/2 cup of cashews
- two pitted dates
- water
- one packet of frozen açaí purée
- 1/2 cup of blackberries
- 3 tbsps of coconut yoghurt
Method:
1. Soak your cashews and dates in water overnight.
2. Blend all of the ingredients (remove the water from the pre-soaked cashews and dates) until smooth. You may need to add a splash of plant-based milk.
3. Serve with fresh fruit & mint!
These taste best once left in the fridge overnight!
