No Bake Açaí Bars

We’re always in the mood for some delicious & simple (no bake!) açaí treats

These are incredibly easy to make & you can store them in the freezer for a long time! 😋


Ingredients:

🤍 Base:
- coconut flakes (3/4 cup)
- almond flour (1/4 cup)
- Medjool dates (4 pitted)
- coconut oil (2 tbsps)
- salt (1/4 tsp)

Blend all of the ingredients until smooth but don’t overdo it.
Use your fingers to spread the base evenly on a baking tray lined with a cooking liner.

💜 Açaí layer:
- soaked cashews (2 cups; soak them overnight in cold water)
- coconut milk (1/2 cup; from a can)
- coconut oil (1/4 cup)
- lemon juice (1/3 cup)
- maple syrup (1/3 cup)
- melted açaí purée (1/2 packet

Blend until smooth, pour the mixture onto the base, add some toppings (we used coconut flakes) & place in the freezer overnight (or at least for 3-4 hours).

Cut the bars using a pre-heated knife (place it in hot water for a while).

Store in the freezer in an airtight container.
