Mango Raisin & Chocolate Chip Muffins
Plant-based milk free, sweet & tropical - perfect as a snack or a breakfast addition.
🧡 Ingredients:
- 1 3/4 cup plain flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon nutmeg
- 2 packets of wild-grown mango purée (melted)
- 6 tablespoons coconut oil (melted)
- 3/4 cup sugar
- 2 tablespoons flax meal (whisked with 6 tablespoons water & set aside for 10 minutes)
- optional: chocolate chips & raisins (a handful of each)
Method:
Mix all of the ingredients together, pour the batter equally into 12 muffin tins.
Bake for 20 minutes at 180 degrees Celsius or until a toothpick inserted in the middle comes out almost dry.
