Keto Açai Bowl (Banana free)

Keto acai bowl

Now, we have nothing against our fruity, yellow friend but sometimes we crave a creamy açai bowl without adding banana.

Top tip: soak your cashews overnight or in freshly boiled water for half an hour, and take your açai packs out of the freezer 15 mins before use to soften.

Serves 1.

Ingredients

  • 2 packs of Grow Wild açai purée (broken into chunks)

  • 2 heaped tablespoons of coconut cream

  • 1 tbsp of cashews (pre-soaked)

  • a splash of coconut milk, or water

  • Toppings: Peanut butter, goji berries, blueberries


Method

  1. Blend the cashews, coconut cream and coconut milk/water into a smooth paste.

  2. Add the açai chunks and blend until an ice cream consistency is reached. You may need to stop and scrape down the sides of the blender, and/or add more milk.

  3. Best served in a coconut, and topped with blueberries, gojis, and a dollop of peanut butter.
