Easy Açai Cheesecake

The kind of cheesecake you can eat for breakfast, as a snack or a summer-time dessert with friends.


Ingredients (makes 2):

  • 1 packet of frozen açaí purée (melted)

  • 1 block of natural tofu

  • 1/2 banana

  • 2 tbsps agave syrup

  • 2 tbsps desiccated coconut

  • Crushed biscuits

  1. Blend the açaí, tofu, banana and agave syrup in a food processor/blender until you get a smooth texture.

  2. Place in a small bowl or ramekin with crushed biscuits and top with fresh fruit.

  3. To achieve a thicker, more cheesecake-y texture, place it in the fridge for a few hours.
