Easy Açai Cheesecake
The kind of cheesecake you can eat for breakfast, as a snack or a summer-time dessert with friends.
Ingredients (makes 2):
1 packet of frozen açaí purée (melted)
1 block of natural tofu
1/2 banana
2 tbsps agave syrup
2 tbsps desiccated coconut
Crushed biscuits
Blend the açaí, tofu, banana and agave syrup in a food processor/blender until you get a smooth texture.
Place in a small bowl or ramekin with crushed biscuits and top with fresh fruit.
To achieve a thicker, more cheesecake-y texture, place it in the fridge for a few hours.
