Brazilian Energy Bites

Acai energy ball

These are the perfect little pick me up, filled with all the good stuff. Can be enjoyed on a mountainside, before yoga, after a surf sesh, or simply alongside a good old cup of tea.

Ingredients

  • 150g medjool dates

  • 75g Brazil nuts

  • 75g Walnuts

  • 2 tbsp organic acai powder

  • 2 tbsp cacao nibs

  • 1 tbsp chia seeds

  • 1 tbsp coconut oil

  • 1 tbsp maca (optional)

  • 1 tsp vanilla essence (optional)

  • Pinch of salt


Method

  1. Roughly chop the nuts in a food processor and tip into a large mixing bowl.

  2. Blend the remaining ingredients (minus the cacao nibs) until a thick paste is formed and add to the bowl.

  3. Using your hands combine well the nuts and date-y mix until it forms a ball.

  4. Make bite size balls out of the mix, rolling between your palms, and place on a tray.

  5. Once all the mix has been used, pop the tray in the fridge for 30 mins until set, and enjoy!
