Chewy Vegan Mango & Orange White Chocolate Cookies

These mango & orange cookies have everything you may need - the sweetness of mango & comforting notes of autumn from the orange peel …oh and did we mention vegan white chocolate?

🧡 Ingredients:

- 2 tbsps flax seeds (ground)
- 1/2 packet of wild-grown mango purée (melted)
- 1 cup sugar
- 1/2 cup butter
- 2 tsps vanilla extract
- orange peel (about 1 tbsp)
- 1 1/2 cup flour
- 2 tsps corn starch
- 1 tsp baking powder
- vegan white chocolate/white chocolate chips


🧡 Method:

Combine the mango purée with flax seeds, stir and set aside.

Mix butter & sugar, once combined add the flax seed “egg”, vanilla extract, orange peel and stir until combined.

Add the wet ingredients into a bowl with the dry ingredients, stir thoroughly - don’t over mix it!

Add the white chocolate chips & incorporate them.

Form balls of dough and place them on a baking tray with baking paper using 2 spoons.

Bake for 15-20 minutes or until golden at 180 degrees Celsius.

Once done, let them cool and harden on the tray for a few minutes before moving them carefully onto a cooling rack.
